In the late 1600’s, the Spanish introduced coffee plants from Cuba and the Dominican Republic into Mexico. Production took off after the Mexican Revolution, and Mexico is now the largest exporter of organic coffees in the world. Mexican coffee typically comes from high altitudes of at least 4,000 feet. This high grown coffee, or altura, in Spanish, lets seeds develop into hard and dense coffee beans. Most high grown Mexican coffee beans are light-bodied with a mild acidity, and excellent choices for blending.
Mexico High Grown is good when a little is blended with Colombian Supremo. Mexico High Grown is also good when used for traditional Mexican coffee.
Good flavor, but a little more acidic than to my liking.
The beans are a little inconsistent in size which made them unique to roast. Makes a nice dark roast.
I haven’t roasted any of my recent order of Mexican beans yet but I’m confident they will be good. Java Bean Plus has the highest quality green coffee beans I have found.

The Mexican High Grown beans are perfect. I roasted them a little darker than I normally do and they turned out great. Very smooth with a chocolate/caramel/nut type of finish which is hard to describe. They took longer to gas off than other beans but they are well worth the wait
